Ingredients

  • ¾ cup pumpkin purée
  • ¾ cup almond butter
  • 2 units eggs
  • ¼ cup maple syrup
  • ¼ cup unsweetened cocoa powder
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ¾ cup dairy free chocolate chips

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. Line a muffin tin with liners or grease it well.
  3. 3. Add all ingredients except for the chocolate chips to a high-speed blender and blend until smooth.
  4. 4. Pour the mixture into a medium-sized bowl and fold in the chocolate chips.
  5. 5. Scoop the batter into each muffin liner, filling them about ¾ full.
  6. 6. Bake for 17-18 minutes.
  7. 7. Remove from the oven and let cool for a few minutes before serving.
