Instructions
- Preheat the oven to 400°F and line two 12-cup muffin tins with paper liners.
- In a large bowl, beat the eggs and then mix in the sugar, pumpkin, oil, and applesauce.
- In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Combine the dry ingredients with the pumpkin mixture until just mixed.
- Fold in the chocolate chips.
- Scoop the batter into the muffin tins using a ¼ cup measuring cup.
- Bake for 15 to 20 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool slightly in the pans before transferring them to a wire rack.
