Ingredients

The muffin batter

  • 4 eggs eggs
  • 2 cups sugar
  • 1 15 oz. can pumpkin
  • 1 cup cooking oil
  • ½ cup applesauce

The dry ingredients

  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon table salt
  • 1 ½ teaspoons pumpkin pie spice

The mix-ins

  • 2 cups chocolate chips

Instructions

  1. Preheat the oven to 400°F and line two 12-cup muffin tins with paper liners.
  2. In a large bowl, beat the eggs and then mix in the sugar, pumpkin, oil, and applesauce.
  3. In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  4. Combine the dry ingredients with the pumpkin mixture until just mixed.
  5. Fold in the chocolate chips.
  6. Scoop the batter into the muffin tins using a ¼ cup measuring cup.
  7. Bake for 15 to 20 minutes, or until a toothpick comes out clean.
  8. Allow the muffins to cool slightly in the pans before transferring them to a wire rack.
