Instructions
- 1. Beat together pumpkin, sugar, light margarine spread, and applesauce in a large bowl. Add eggs and mix well.
- 2. In a separate bowl, combine flour, baking soda, and spices. Mix together and add to the wet ingredients, beating until just blended.
- 3. Drop the mixture into a greased muffin tin.
- 4. Bake at 350°F for 15-20 minutes or until a toothpick comes out clean. Cool for 15 minutes.
