Instructions
- Preheat the oven to 375°F and line two muffin tins with paper liners.
- In a large bowl, whisk together the eggs, pumpkin, oil, applesauce, and sugar.
- In another bowl, combine the flour, pumpkin pie spice, baking soda, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Divide the batter evenly among the muffin tins, filling each cup about 2/3 full.
- Bake for 15-20 minutes until the muffins spring back when touched or a toothpick comes out clean.
- Remove the muffins from the tin and let them cool on a rack.
- For the glaze, whisk together the powdered sugar and heavy cream until smooth, then drizzle over the cooled muffins.
