Ingredients

The muffins

  • 1 ½ cups all purpose flour
  • 1 cup wheat flour
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • ½ tablespoon cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ½ teaspoon nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs, lightly beaten
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla
  • ¼ cup canola oil
  • ¼ cup applesauce
  • 2 cups peeled, cored and chopped apples

Streusel topping

  • 2 tablespoons all purpose flour
  • ¼ cup sugar
  • 1 teaspoon cinnamon
  • a sprinkle nutmeg
  • 4 teaspoons butter, softened
  • 2 tablespoons oats

Instructions

  1. Preheat the oven to 350°F and lightly grease muffin cups or use paper liners.
  2. In a large bowl, sift together the all-purpose flour, wheat flour, sugars, spices, baking soda, and salt.
  3. In a separate bowl, mix together the eggs, pumpkin, vanilla, oil, and applesauce.
  4. Add the pumpkin mixture to the flour mixture and stir just enough to moisten, being careful not to over mix.
  5. Fold in the chopped apples and spoon the batter into the prepared muffin cups.
  6. For the streusel topping, mix together the flour, sugar, cinnamon, nutmeg, and oats in a small bowl.
  7. Cut in the softened butter until the mixture resembles coarse crumbs, then sprinkle it evenly over the muffin batter.
  8. Bake in the preheated oven for about 20 minutes for regular muffins and 12-15 minutes for mini muffins, checking frequently.
  9. Let the muffins cool before enjoying.
