Ingredients

The muffins

  • cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ tablespoon cinnamon
  • teaspoons nutmeg
  • cups sugar
  • ½ cup canola oil
  • cup water
  • 1 cup canned pumpkin
  • 2 large eggs
  • 1 teaspoon vanilla extract

Brown Sugar Cinnamon Filling

  • 1 cup brown sugar
  • ½ teaspoon cinnamon

Streusel Topping

  • cups oats
  • 1 tablespoon flour
  • cup brown sugar
  • 1 teaspoon cinnamon
  • a dash nutmeg
  • 6 tablespoons cold butter

Instructions

  1. Preheat the oven to 350°F and prepare muffin tins with liners or cooking spray.
  2. Whisk together the dry ingredients in a medium bowl.
  3. In a large bowl, mix the wet ingredients until smooth.
  4. Combine the wet and dry mixtures until just mixed.
  5. Prepare the brown sugar cinnamon filling by mixing the ingredients in a small bowl.
  6. For the streusel topping, mix the ingredients in another small bowl and incorporate the butter until crumbly.
  7. Fill muffin cups halfway with batter, add the filling, then top with remaining batter and streusel.
  8. Bake for 17-20 minutes until a toothpick comes out clean, then cool on a wire rack.
