Instructions
- Preheat the oven to 350°F and prepare muffin tins with liners or cooking spray.
- Whisk together the dry ingredients in a medium bowl.
- In a large bowl, mix the wet ingredients until smooth.
- Combine the wet and dry mixtures until just mixed.
- Prepare the brown sugar cinnamon filling by mixing the ingredients in a small bowl.
- For the streusel topping, mix the ingredients in another small bowl and incorporate the butter until crumbly.
- Fill muffin cups halfway with batter, add the filling, then top with remaining batter and streusel.
- Bake for 17-20 minutes until a toothpick comes out clean, then cool on a wire rack.
