Ingredients

Pumpkin Muffin Ingredients

  • 2 cups white whole wheat or all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 cup sugar
  • 1 15 oz can pumpkin puree
  • ½ cup butter, melted
  • 2 large eggs
  • 2 tsp vanilla extract

Cinnamon Streusel Topping Ingredients

  • 2 Tbsp butter, room temperature
  • ¼ cup sugar
  • ¼ cup flour
  • 2 tsp cinnamon

Glaze Ingredients

  • 1 Tbsp butter, melted
  • 1 cup powdered sugar
  • 1–2 Tbsp milk

Instructions

  1. Preheat the oven to 350°F and prepare baking cups.
  2. Whisk together the dry ingredients in a medium bowl.
  3. In a large bowl, whisk together the pumpkin, melted butter, eggs, and vanilla.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill the baking cups 2/3 full and top with streusel.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let cool and drizzle with glaze.
