Instructions
- Preheat the oven to 350 degrees.
- Grease the muffin tin with butter or oil.
- In a small bowl, combine pureed pumpkin, vanilla extract, melted butter, beaten eggs, and unsweetened applesauce.
- In a large mixing bowl, combine flour, protein powder, sweetener, salt, baking soda, and pumpkin pie spice.
- Add the wet ingredients to the dry ingredients and mix. Add water as needed to achieve the right batter consistency.
- Stir until just combined, being careful not to overmix.
- Fold in the chocolate chips.
- Pour the batter into muffin tins, filling them about ¾ full.
- Bake for 18-25 minutes or until a toothpick comes out clean.
- Cool before serving.
