Ingredients

  • 15.5 oz pureed pumpkin
  • 1 teaspoon vanilla extract
  • 2 ½ tablespoons unsalted melted butter
  • 2 ½ tablespoons unsweetened applesauce
  • 2 large eggs, beaten
  • 2 cups all-purpose flour
  • 93 grams protein powder
  • 1 ½ teaspoons pumpkin pie spice
  • ½ cup sweetener or sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ¼ cup water
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Grease the muffin tin with butter or oil.
  3. In a small bowl, combine pureed pumpkin, vanilla extract, melted butter, beaten eggs, and unsweetened applesauce.
  4. In a large mixing bowl, combine flour, protein powder, sweetener, salt, baking soda, and pumpkin pie spice.
  5. Add the wet ingredients to the dry ingredients and mix. Add water as needed to achieve the right batter consistency.
  6. Stir until just combined, being careful not to overmix.
  7. Fold in the chocolate chips.
  8. Pour the batter into muffin tins, filling them about ¾ full.
  9. Bake for 18-25 minutes or until a toothpick comes out clean.
  10. Cool before serving.
