Ingredients

Dry Ingredients

  • 6 tablespoons unsweetened cocoa powder

Wet Ingredients

  • ½ cup canola oil
  • 1 cup sugar
  • ¼ cup brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla
  • 2 teaspoons pumpkin spice extract
  • 1 15 oz can pumpkin puree

Instructions

  1. Preheat the oven to 350°F and prepare muffin tins or loaf pans.
  2. In a large bowl, whisk together the dry ingredients until well combined.
  3. Make a well in the center and add the wet ingredients.
  4. Mix until just combined, being careful not to overmix.
  5. Pour the batter into the prepared muffin tins or loaf pans.
  6. Bake for 12-15 minutes for muffins, until a toothpick comes out with moist crumbs.
  7. Let cool before frosting if desired.
