Instructions
- Preheat the oven to 425°F (218°C) and prepare a muffin pan.
- In a large bowl, mix the pumpkin, brown sugar, maple syrup, egg whites, yogurt, coconut oil, and vanilla until smooth.
- Sift together the flours, cocoa powder, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice in another bowl.
- Combine the wet and dry ingredients carefully, folding in the chocolate chips.
- Fill the muffin cups to the top with batter and optionally sprinkle more chocolate chips on top.
- Bake for 5 minutes at 425°F, then reduce the temperature to 375°F (191°C) and bake for an additional 13 minutes.
- Check for doneness with a toothpick and let cool for 5 minutes in the pan before transferring to a wire rack.
