Ingredients

  • ¾ cup pumpkin puree
  • ½ cup packed light brown sugar
  • ¼ cup pure maple syrup
  • 2 large egg whites
  • cup nonfat Greek yogurt
  • 2 Tablespoons coconut oil, melted
  • 1 teaspoon pure vanilla extract
  • ½ cup all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • cup mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  2. In a large bowl, mix the pumpkin, brown sugar, maple syrup, egg whites, yogurt, coconut oil, and vanilla until smooth.
  3. Sift together the flours, cocoa powder, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice in another bowl.
  4. Combine the wet and dry ingredients carefully, folding in the chocolate chips.
  5. Fill the muffin cups to the top with batter and optionally sprinkle more chocolate chips on top.
  6. Bake for 5 minutes at 425°F, then reduce the temperature to 375°F (191°C) and bake for an additional 13 minutes.
  7. Check for doneness with a toothpick and let cool for 5 minutes in the pan before transferring to a wire rack.
