Ingredients

  • 2 medium overripe bananas, mashed
  • 2 large or medium eggs
  • ½ cup pumpkin puree
  • ¼ cup coconut sugar
  • ¼ cup coconut oil
  • 1 teaspoon vanilla
  • cups white whole wheat flour
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • optional chocolate chips or nuts

Instructions

  1. 1. Preheat the oven to 350°F and line a muffin tin with liners and nonstick spray.
  2. 2. In a large bowl, mash the bananas and whisk in the eggs, pumpkin puree, coconut sugar, coconut oil, and vanilla.
  3. 3. In a separate bowl, mix the whole wheat flour, pumpkin pie spice, baking soda, and salt.
  4. 4. Combine the dry ingredients with the wet ingredients and stir well. Add any optional chocolate chips or nuts.
  5. 5. Divide the batter into the muffin tin and bake for 26-28 minutes, or until a toothpick comes out clean.
