Instructions
- Preheat the oven to 375°F and prepare a muffin tin with cooking spray.
- In a large mixing bowl, combine applesauce, egg, sugar, and vanilla, mixing well.
- Stir in the melted butter and then add the chopped apples.
- In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and salt.
- Combine the dry ingredients with the wet ingredients until just mixed.
- Spoon the batter into the muffin cups and bake for 18-20 minutes until a toothpick comes out clean.
