Ingredients

  • 1 cup unsweetened applesauce
  • 1 large egg
  • cup white sugar
  • 1 teaspoon vanilla extract
  • 5 tablespoons light butter, melted
  • 1 cup peeled and chopped apples
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with cooking spray.
  2. In a large mixing bowl, combine applesauce, egg, sugar, and vanilla, mixing well.
  3. Stir in the melted butter and then add the chopped apples.
  4. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and salt.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Spoon the batter into the muffin cups and bake for 18-20 minutes until a toothpick comes out clean.
