Ingredients

The dough

  • ½ cup milk
  • tsp active dry yeast
  • ½ cup sour cream
  • cup granulated sugar
  • 1 tsp salt
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 Tbsp vegetable oil
  • 2 Tbsp butter, melted
  • 3 - 3¼ cups all-purpose flour

The filling

  • 2 cups peeled and grated Granny Smith apples
  • 2 tsp lemon juice
  • ¾ cup packed light-brown sugar
  • 1 Tbsp cinnamon
  • ¼ tsp nutmeg
  • ¼ cup butter, halfway melted

The topping

  • 2 Tbsp butter, melted
  • 2 cups powdered sugar
  • 3 - 5 Tbsp reserved apple juice
  • ½ tsp vanilla extract

Instructions

  1. Dissolve yeast in warmed milk and let it rest.
  2. Combine sour cream, sugar, salt, egg, vanilla, oil, and melted butter in a bowl.
  3. Add the milk mixture and blend, then gradually mix in flour until a soft dough forms.
  4. Knead the dough until smooth and elastic, then let it rise until doubled in size.
  5. Grate the apples, toss with lemon juice, and prepare the cinnamon sugar mixture.
  6. Roll out the dough, brush with melted butter, and sprinkle with the cinnamon sugar mixture.
  7. Layer the strained apples over the cinnamon mixture and roll up the dough tightly.
  8. Cut the rolled dough into 12-13 pieces and place in muffin tins.
  9. Let the rolls rest while preheating the oven to 375°F.
  10. Bake until golden and cooked through, then cool slightly before glazing.
