Ingredients

Crumb Topping

Muffins

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • ½ cup yogurt or sour cream
  • 2 teaspoons pure vanilla extract
  • ¼ cup milk
  • cups peeled & chopped apples

Vanilla Icing (Optional)

  • 1 cup confectioners’ sugar
  • 3 Tablespoons heavy cream
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  2. Make the crumb topping by mixing brown sugar, granulated sugar, and cinnamon, then adding melted butter and flour.
  3. Prepare the muffin batter by whisking together flour, baking soda, baking powder, cinnamon, and salt.
  4. Cream together butter and sugars, then add eggs, yogurt, and vanilla. Mix until combined.
  5. Gradually add the dry ingredients and milk to the wet mixture, then fold in the apples.
  6. Fill muffin cups to the top with batter and add crumb topping, pressing it down slightly.
  7. Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for an additional 15-18 minutes.
  8. Allow muffins to cool before optionally drizzling with icing.
