Instructions
- Preheat the oven to 425°F (218°C) and prepare a muffin pan.
- Make the crumb topping by mixing brown sugar, granulated sugar, and cinnamon, then adding melted butter and flour.
- Prepare the muffin batter by whisking together flour, baking soda, baking powder, cinnamon, and salt.
- Cream together butter and sugars, then add eggs, yogurt, and vanilla. Mix until combined.
- Gradually add the dry ingredients and milk to the wet mixture, then fold in the apples.
- Fill muffin cups to the top with batter and add crumb topping, pressing it down slightly.
- Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for an additional 15-18 minutes.
- Allow muffins to cool before optionally drizzling with icing.
