Instructions
- Preheat the oven to 375°F and line a muffin tin with 6 liners.
- In a small saucepan, combine diced apples, butter, brown sugar, and cinnamon, then simmer until the apples are softened and the sugar is caramelized.
- In a small bowl, whisk together the flour, baking soda, cinnamon, all spice, and salt.
- In a medium bowl, cream the softened butter and sugar, then add the egg white, yogurt or sour cream, and vanilla, mixing well.
- Stir in the flour mixture until just combined, then fold in the caramelized apples.
- Divide the batter between the prepared muffin cups.
- In a small bowl, mix together the ingredients for the streusel, then sprinkle over the muffin batter.
- Bake for 15 to 18 minutes, until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a cooling rack.
