Ingredients

Cinnamon Apples

  • 1 cup peeled and diced apples
  • 1 tablespoon unsalted butter
  • 2 tablespoons packed brown sugar
  • 1 teaspoon cinnamon

Muffin Base

  • cup all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon cinnamon
  • teaspoon all spice
  • teaspoon salt
  • 3 tablespoons unsalted butter
  • ¼ cup granulated sugar
  • 1 large egg white
  • 3 tablespoons sour cream or plain yogurt
  • ½ teaspoon vanilla extract

Streusel

  • 2 tablespoons packed brown sugar
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with 6 liners.
  2. In a small saucepan, combine diced apples, butter, brown sugar, and cinnamon, then simmer until the apples are softened and the sugar is caramelized.
  3. In a small bowl, whisk together the flour, baking soda, cinnamon, all spice, and salt.
  4. In a medium bowl, cream the softened butter and sugar, then add the egg white, yogurt or sour cream, and vanilla, mixing well.
  5. Stir in the flour mixture until just combined, then fold in the caramelized apples.
  6. Divide the batter between the prepared muffin cups.
  7. In a small bowl, mix together the ingredients for the streusel, then sprinkle over the muffin batter.
  8. Bake for 15 to 18 minutes, until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a cooling rack.
