Instructions
- Melt the coconut oil and bring the milk to room temperature, then mix the vinegar into the milk and let it sit.
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the coconut oil, buttermilk, brown sugar, egg, and vanilla until smooth.
- Add the flours, baking soda, baking powder, salt, and allspice to the wet ingredients, stirring until just combined.
- Fold in the chopped apples and scoop the mixture into a greased or lined muffin tin.
- Melt the butter for the topping and mix with sugar and cinnamon, then spoon over the muffin tops.
- Bake for about 15-20 minutes until golden brown and a toothpick comes out clean.
