Ingredients

The muffins

  • cups finely chopped apples
  • cup coconut oil
  • 1 cup milk
  • 2 teaspoons white vinegar
  • cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup all purpose flour
  • cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon allspice

The crunchy topping

  • 2 tablespoons butter
  • 3 tablespoons white sugar
  • ½ teaspoon cinnamon

Instructions

  1. Melt the coconut oil and bring the milk to room temperature, then mix the vinegar into the milk and let it sit.
  2. Preheat the oven to 350°F (175°C).
  3. In a large bowl, whisk together the coconut oil, buttermilk, brown sugar, egg, and vanilla until smooth.
  4. Add the flours, baking soda, baking powder, salt, and allspice to the wet ingredients, stirring until just combined.
  5. Fold in the chopped apples and scoop the mixture into a greased or lined muffin tin.
  6. Melt the butter for the topping and mix with sugar and cinnamon, then spoon over the muffin tops.
  7. Bake for about 15-20 minutes until golden brown and a toothpick comes out clean.
