Ingredients

The crumble topping

  • ½ cup all-purpose flour
  • cup brown sugar

  • ¼ cup soft coconut oil

The muffins

  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • ½ cup almond flour
  • 1 tablespoon baking powder
  • 2 teaspoons apple pie spice
  • ½ teaspoon sea salt
  • ½ cup unsweetened almond milk
  • ½ cup unsweetened applesauce
  • ½ cup cane sugar
  • ¼ cup avocado oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apple

The glaze

  • ¾ cup powdered sugar
  • 1 to 1½ tablespoons unsweetened almond milk

Instructions

  1. Preheat the oven to 400°F and grease a 12-cup muffin tin.
  2. Make the crumble topping by whisking together flour, brown sugar, and cinnamon in a bowl, then mix in the coconut oil until crumbly.
  3. In a large bowl, whisk together the dry ingredients for the muffins.
  4. In a medium bowl, whisk the wet ingredients until well combined.
  5. Combine the wet and dry ingredients, then gently fold in the diced apples.
  6. Scoop the batter into the muffin cups and sprinkle the crumble topping on top.
  7. Bake for 17 to 22 minutes until a toothpick comes out clean.
  8. Let cool for 10 minutes, then transfer to a wire rack.
  9. Make the glaze by whisking powdered sugar and almond milk until smooth, then drizzle over the cooled muffins.
