Ingredients

The muffins

  • 2 cups all purpose flour
  • cups rolled oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 2 eggs eggs

  • 1 cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract

The crumble

  • cup all purpose flour
  • cup coconut sugar
  • 1 tsp cinnamon
  • ¼ cup melted coconut oil

The drizzle

  • 1 cup powdered sugar
  • 1-2 tbsp almond milk

Instructions

  1. Preheat the oven to 350°F and line muffin tins with liners or nonstick spray.
  2. In a medium bowl, mix together flour, oats, baking powder, baking soda, salt, and cinnamon, and set aside.
  3. In a large bowl, whisk together eggs and milk, then beat in the sugar, coconut oil, and vanilla extract until combined.
  4. Slowly add the dry mixture to the wet ingredients and fold in the shredded apples without over-mixing.
  5. Scoop the batter evenly into the muffin tin to make about 21 muffins.
  6. In a separate bowl, combine the crumble ingredients until crumbly, then sprinkle over the unbaked muffins.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Make the drizzle by whisking together the powdered sugar and almond milk, then let the muffins cool for 20 minutes before drizzling.
