Instructions
- Preheat the oven to 350°F and line muffin tins with liners or nonstick spray.
- In a medium bowl, mix together flour, oats, baking powder, baking soda, salt, and cinnamon, and set aside.
- In a large bowl, whisk together eggs and milk, then beat in the sugar, coconut oil, and vanilla extract until combined.
- Slowly add the dry mixture to the wet ingredients and fold in the shredded apples without over-mixing.
- Scoop the batter evenly into the muffin tin to make about 21 muffins.
- In a separate bowl, combine the crumble ingredients until crumbly, then sprinkle over the unbaked muffins.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Make the drizzle by whisking together the powdered sugar and almond milk, then let the muffins cool for 20 minutes before drizzling.
