Easy Applesauce Oatmeal Muffins

Instructions
- 1. Preheat the oven to 350°F and spray a muffin tin with cooking spray.
- 2. In a medium bowl, mix together applesauce, milk, peanut butter, maple syrup, egg, and vanilla extract until well combined.
- 3. Add oats, baking powder, cinnamon, nutmeg, and salt to the wet ingredients and stir until just combined.
- 4. Fold in the diced apple.
- 5. Spoon the mixture evenly into the muffin tin, filling each cup to the top.
- 6. Bake for 25-27 minutes or until a knife comes out clean.
- 7. Let the muffins cool for at least 15 minutes before transferring them to a wire rack to cool completely.
