Flourless Apple Cinnamon Muffins

Ingredients

  • 1 cup creamy natural salted peanut butter
  • 1 cup unsweetened applesauce
  • 3 large eggs
  • ¼ cup pure maple syrup or honey
  • 1 medium apple, diced small (about 1 ½ cups)
  • 1 tbsp cinnamon
  • ¾ tsp baking soda
  • ¼ tsp fine sea salt

Instructions

  1. Preheat the oven to 350°F and grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, whisk together all ingredients except for the chopped apple. Alternatively, blend all ingredients in a food processor or blender.
  3. Fold in the diced apple.
  4. Divide the batter evenly into the muffin tin, filling each cup to the top.
  5. Bake for 22-25 minutes, or until a knife comes out clean.
  6. Allow the muffins to cool for at least 20 minutes before removing them from the pan and cooling on a wire rack.
