Ingredients

The batter

  • ½ cup coconut oil, melted
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 6 units eggs
  • ½ cup coconut flour
  • ½ teaspoon cinnamon
  • ¼ teaspoon baking soda
  • ½ teaspoon fine sea salt

The filling

  • 1 cup granny smith apples, peeled and diced

Instructions

  1. Preheat the oven to 350ºF.
  2. In a large bowl, whisk together the eggs, melted coconut oil, vanilla extract, and maple syrup.
  3. Add the coconut flour, fine sea salt, baking soda, and cinnamon to the mixture and stir until well combined.
  4. Gently fold in the peeled and diced granny smith apples.
  5. Grease a muffin tin and fill each muffin cup ¾ of the way full.
  6. Bake for 35-40 minutes.
