Paleo Apple Cinnamon Muffins

Instructions
- Preheat the oven to 350ºF.
- In a large bowl, whisk together the eggs, melted coconut oil, vanilla extract, and maple syrup.
- Add the coconut flour, fine sea salt, baking soda, and cinnamon to the mixture and stir until well combined.
- Gently fold in the peeled and diced granny smith apples.
- Grease a muffin tin and fill each muffin cup ¾ of the way full.
- Bake for 35-40 minutes.
