Ingredients

The Muffins

  • 1 cup whole wheat flour
  • ¾ cup old fashioned rolled oats
  • ½ cup oat flour
  • 1 tablespoon baking powder
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground nutmeg
  • 1 cup non-fat milk
  • ¼ cup pure maple syrup
  • ¼ cup coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

The Crumb Topping

  • 1 tablespoon cold unsalted butter
  • 3 tablespoons flour
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 400°F and prepare a muffin tin.
  2. Mix the dry ingredients in a large bowl.
  3. Whisk the wet ingredients in a separate bowl.
  4. Combine the wet and dry ingredients gently.
  5. Fill the muffin cups with batter and prepare the crumb topping.
  6. Sprinkle the crumb topping over the muffins.
  7. Bake for 18 to 20 minutes until golden brown.
  8. Cool the muffins for 5 minutes in the pan before transferring to a wire rack.
