Instructions
- Preheat the oven to 375°F and prepare the muffin cups with nonstick spray or liners.
- In a large bowl, whisk together the oats and the next nine ingredients.
- Add the buttermilk, oil, egg, and vanilla to the dry ingredients and whisk to combine.
- Stir in the boiling water and let the mixture stand for 5 minutes.
- Divide the batter among the prepared muffin cups.
- Bake until a tester comes out clean, about 28 minutes for large muffins or 20 minutes for standard muffins.
- Cool for 10 minutes, then turn the muffins out onto a rack to cool completely.
