Healthy Whole Wheat Oatmeal Muffins

Ingredients

  • 2 ⅓ cups quick-cooking oats
  • 1 cup whole wheat or white flour
  • ½ cup dark brown sugar
  • ½ cup sugar
  • 2 tablespoons natural oat bran
  • 2 tablespoons wheat germ
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons baking soda
  • 1 teaspoon kosher salt
  • 1 cup buttermilk
  • ½ cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup boiling water

Instructions

  1. Preheat the oven to 375°F and prepare the muffin cups with nonstick spray or liners.
  2. In a large bowl, whisk together the oats and the next nine ingredients.
  3. Add the buttermilk, oil, egg, and vanilla to the dry ingredients and whisk to combine.
  4. Stir in the boiling water and let the mixture stand for 5 minutes.
  5. Divide the batter among the prepared muffin cups.
  6. Bake until a tester comes out clean, about 28 minutes for large muffins or 20 minutes for standard muffins.
  7. Cool for 10 minutes, then turn the muffins out onto a rack to cool completely.
