Instructions
- Preheat the oven to 425°F (218°C) and prepare a muffin pan.
- In a large bowl, mix the dry ingredients including flour, oats, cinnamon, baking soda, baking powder, and salt.
- In another bowl, mash the bananas and mix in the eggs, oil, maple syrup, milk, and vanilla.
- Combine the wet and dry ingredients, then fold in the chopped nuts.
- Fill the muffin liners to the top and optionally sprinkle oats and coconut sugar on top.
- Bake for 5 minutes at 425°F, then reduce the temperature to 350°F and bake for an additional 15-16 minutes.
- Let the muffins cool for 5 minutes in the pan before transferring them to a wire rack.
