Ingredients

The Muffins

  • 2 cups whole wheat flour
  • ½ cup old-fashioned whole rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 and ⅓ cups mashed banana
  • 2 large eggs
  • cup coconut oil
  • cup pure maple syrup
  • cup milk
  • 1 teaspoon pure vanilla extract
  • 1 cup chopped nuts

Optional Toppings

  • 3 tablespoons oats
  • to taste none coconut sugar

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  2. In a large bowl, mix the dry ingredients including flour, oats, cinnamon, baking soda, baking powder, and salt.
  3. In another bowl, mash the bananas and mix in the eggs, oil, maple syrup, milk, and vanilla.
  4. Combine the wet and dry ingredients, then fold in the chopped nuts.
  5. Fill the muffin liners to the top and optionally sprinkle oats and coconut sugar on top.
  6. Bake for 5 minutes at 425°F, then reduce the temperature to 350°F and bake for an additional 15-16 minutes.
  7. Let the muffins cool for 5 minutes in the pan before transferring them to a wire rack.
