Instructions
- Preheat the oven to 350°F and line a 12-cup muffin tray with liners or grease the pan.
- Mash the bananas in a large bowl until broken down but still chunky.
- Add the flour, coconut oil, coconut sugar, eggs, vanilla, cinnamon, baking soda, and salt to the bowl and mix until well combined.
- Fold in the chopped walnuts.
- Divide the batter evenly among the 12 muffin cups and optionally top with a walnut half.
- Bake for 20-25 minutes until fragrant and golden brown.
- Cool the muffins before serving.
