Ingredients

  • 2-3 ripe bananas bananas
  • 1 cup white whole wheat flour
  • 2 tablespoons coconut oil
  • ¾ cup coconut sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F and line a 12-cup muffin tray with liners or grease the pan.
  2. Mash the bananas in a large bowl until broken down but still chunky.
  3. Add the flour, coconut oil, coconut sugar, eggs, vanilla, cinnamon, baking soda, and salt to the bowl and mix until well combined.
  4. Fold in the chopped walnuts.
  5. Divide the batter evenly among the 12 muffin cups and optionally top with a walnut half.
  6. Bake for 20-25 minutes until fragrant and golden brown.
  7. Cool the muffins before serving.
