Ingredients

  • 2 cups white whole wheat flour
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • cup melted coconut oil
  • ½ cup honey
  • 2 large eggs, whisked
  • 1 cup mashed ripe bananas (about 3 bananas)
  • ¼ cup milk of choice
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 325°F and prepare the muffin tin.
  2. In a large bowl, mix together the flour, salt, cinnamon, and baking soda.
  3. In a separate bowl, mix the melted coconut oil and honey together.
  4. Add the whisked eggs to the oil and honey mixture and stir.
  5. Mix in the mashed bananas, milk, and vanilla extract.
  6. Combine the dry ingredients with the wet ingredients and stir until combined.
  7. If desired, fold in the chocolate chips.
  8. Divide the batter into the prepared muffin tins and bake for 23-25 minutes, testing with a toothpick for doneness.
