Ingredients

  • 3 cups bread flour
  • 2 tablespoons bread flour
  • 1 cup old-fashioned whole oats or quick oats
  • teaspoons Platinum Yeast or any instant or active dry yeast
  • teaspoons salt
  • ½ teaspoon ground cinnamon
  • cups water
  • 6 tablespoons honey
  • 2 tablespoons vegetable oil

Instructions

  1. Whisk together the bread flour, oats, yeast, salt, and cinnamon in a large bowl.
  2. In another bowl, mix the water, honey, and oil, then pour it into the flour mixture and stir until combined.
  3. Cover the dough and let it rise at room temperature for 12-18 hours.
  4. Grease a 9x5-inch loaf pan.
  5. After the first rise, fold in the remaining bread flour, then shape the dough into a loaf and place it in the prepared pan.
  6. Cover loosely and let it rise for another hour.
  7. Preheat the oven to 375°F (191°C).
  8. Bake the bread for 50-60 minutes, tenting with foil after 30 minutes if it browns too quickly.
  9. Cool the bread in the pan for at least 15 minutes before slicing.
