Ingredients

The soup base

  • cups bone broth or chicken broth
  • 1 large egg
  • to taste Red Boat fish sauce (optional)
  • to taste Umami Stir-Fry Powder or Diamond Crystal kosher salt
  • to taste ground white pepper (optional)

Optional garnishes

  • 1 scallion thinly sliced (optional)
  • 2 tablespoons cilantro leaves (optional)
  • to taste hot chili peppers, thinly sliced (optional)
  • as needed leftover Kalua Pig (optional topping)

Instructions

  1. Bring the bone broth to a rolling boil in a small saucepan over medium-high heat.
  2. Flavor the broth with fish sauce and/or Umami Stir-Fry Powder or salt to taste.
  3. Crack the egg into a small bowl, season it, and whisk well.
  4. Remove the broth from heat and stir while slowly pouring in the whisked egg.
  5. Taste and adjust seasoning as needed.
  6. Transfer the soup to a bowl and garnish with your favorite add-ins.
