Ingredients

The broth

  • 4 cups chicken broth
  • ½ teaspoon fresh ginger
  • 2 teaspoons soy sauce
  • 1 teaspoon toasted sesame oil
  • salt and pepper to taste

The thickening agent

  • tablespoons cornstarch

The main ingredients

  • 3 large eggs
  • cup corn kernels
  • ¼ cup green onions

For garnish

  • more to taste green onions

Instructions

  1. Whisk together ¼ cup of chicken broth with the cornstarch until smooth and set aside.
  2. In a pot, combine the remaining chicken broth, ginger, soy sauce, sesame oil, salt, and pepper over medium heat and bring to a simmer.
  3. Slowly whisk in the cornstarch mixture and increase the heat to high to bring to a boil. Cook for 1 minute, then reduce the heat back to medium.
  4. Stir the soup in a circular motion while pouring in the beaten eggs to create ribbons.
  5. Add corn and green onions, cooking for an additional minute.
  6. Serve garnished with more green onions if desired.
