The dressing

Instructions
- Cook the quinoa according to package directions and let it cool.
- In a large mixing bowl, combine the cooled quinoa with corn, onion, peach, blueberries, cucumber, mint, parsley, almonds, and optional cheese.
- Add olive oil, lemon juice, salt, and pepper, and stir to combine.
- Taste and adjust seasoning as needed, then serve.
