Mediterranean Quinoa Salad

Ingredients

  • 3 cups cooked quinoa, cooled
  • cups assorted cherry tomatoes, halved
  • 8 units radishes, trimmed and quartered
  • ½ cup vegan or regular feta
  • ¼ cup fresh mint, chopped
  • 3 tbsp fresh oregano, chopped
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 unit avocado, pitted and cut into cubes

Instructions

  1. Combine all ingredients except the avocado in a large bowl and stir until mixed.
  2. Store in the refrigerator in individual containers or one large container.
  3. When serving, add the desired amount of avocado on top or mix it into the salad.
