Instructions
- In a large bowl, combine quinoa, roasted tomatoes, cucumbers, feta, olives, onion, and pine nuts.
- Toss to combine, then drizzle with half the dressing and toss again.
- Sprinkle with salt, pepper, and red pepper flakes, then toss again.
- If meal prepping, add roasted chickpeas, arugula, and herbs just before serving.
