Instructions
- Rinse the quinoa and cook it according to package directions.
- Chop the cucumber, red pepper, and red onion, and slice the cherry tomatoes in half.
- In a large bowl, combine the chopped salad ingredients and add the cooked quinoa.
- In a small bowl, mix together the dressing ingredients until well combined.
- Pour the dressing over the salad and stir to combine. Adjust seasonings to taste.
