Instructions
- Rinse quinoa well and add it to a medium saucepan with salt and water.
- Bring to a boil over medium heat, then reduce heat to low, cover, and simmer until tender and liquid is absorbed, about 15 minutes.
- Uncover and fluff quinoa with a fork, then transfer to a large bowl and cool in the fridge.
- Prepare the dressing by whisking together all dressing ingredients.
- Chop the cucumber, bell pepper, red onion, and olives.
- Remove quinoa from the fridge, add chopped veggies and dressing, and adjust seasonings to taste.
- Sprinkle feta on top and enjoy.
