Ingredients

The salad

  • 1 ½ cups quinoa (uncooked)
  • 1 medium cucumber, de-seeded and chopped
  • 1 red bell pepper, chopped
  • ½ large red onion, chopped
  • 1 ½ cups cherry tomatoes, chopped
  • ¾ cup feta cheese
  • ¾ cup kalamata olives, pitted and halved
  • 1 cup parsley, loosely packed and finely chopped

The dressing

  • 1 batch 5 minute Mediterranean salad dressing

Instructions

  1. Cook quinoa with 2 ½ cups of water until done, about 15 minutes, then fluff and cool in a large bowl.
  2. Whisk together the dressing ingredients and set aside.
  3. Combine the cooled quinoa with cucumber, bell pepper, red onion, cherry tomatoes, feta, olives, and parsley.
  4. Pour the dressing over the salad and toss to combine. Serve at room temperature or chill in the fridge.
