Mediterranean Quinoa Salad

The salad

quinoa (uncooked)

cucumber, de-seeded and chopped

cherry tomatoes, chopped

kalamata olives, pitted and halved

parsley, loosely packed and finely chopped
The dressing

5 minute Mediterranean salad dressing
Instructions
- Cook quinoa with 2 ½ cups of water until done, about 15 minutes, then fluff and cool in a large bowl.
- Whisk together the dressing ingredients and set aside.
- Combine the cooled quinoa with cucumber, bell pepper, red onion, cherry tomatoes, feta, olives, and parsley.
- Pour the dressing over the salad and toss to combine. Serve at room temperature or chill in the fridge.
