Instructions
- Soak the Thai glass noodles in warm water for about 20 minutes until soft, then drain.
- Heat a wok with 3 tablespoons of oil until hot, then add garlic and onions, stir-frying until aromatic.
- Add crab meat to the wok and stir well, seasoning with fish sauce if using frozen crab.
- Add the soaked glass noodles along with oyster sauce, fish sauce, sesame oil, sugar, and ground white pepper, stirring to combine.
- Add bean sprouts and stir quickly, then push the noodles to the side of the wok.
- Add the remaining tablespoon of oil and the beaten eggs, cooking briefly before mixing with the noodles.
- Add scallions and salt to taste, stir a few times, then serve immediately.
