Pad Woon Sen Noodles

Ingredients

The noodles and protein

  • 8 oz Thai glass noodles
  • 3 oz crab meat
  • 2 eggs eggs

The sauce and seasonings

  • 4 tablespoons oil
  • 2 cloves garlic
  • ½ medium onion
  • 1 tablespoon oyster sauce
  • 2 tablespoons fish sauce
  • ¼ teaspoon sesame oil
  • ½ tablespoon sugar
  • 3 dashes ground white pepper
  • salt to taste

The vegetables

  • 4 oz bean sprouts
  • 3 stalks scallions

Instructions

  1. Soak the Thai glass noodles in warm water for about 20 minutes until soft, then drain.
  2. Heat a wok with 3 tablespoons of oil until hot, then add garlic and onions, stir-frying until aromatic.
  3. Add crab meat to the wok and stir well, seasoning with fish sauce if using frozen crab.
  4. Add the soaked glass noodles along with oyster sauce, fish sauce, sesame oil, sugar, and ground white pepper, stirring to combine.
  5. Add bean sprouts and stir quickly, then push the noodles to the side of the wok.
  6. Add the remaining tablespoon of oil and the beaten eggs, cooking briefly before mixing with the noodles.
  7. Add scallions and salt to taste, stir a few times, then serve immediately.
