Ingredients

The main ingredients

  • 4 tablespoons oil
  • 4 cloves garlic, minced
  • 4 oz boneless and skinless chicken breast, cut into thin pieces
  • 4 oz shrimp, peeled and deveined
  • 1 lb fresh flat rice noodles
  • 6 oz Chinese broccoli, cut into pieces
  • 2 eggs beaten

The sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons fish sauce
  • 3 tablespoons sweet soy sauce
  • to taste sugar, optional

Instructions

  1. Loosen the fresh flat rice noodles and prepare dry rice stick noodles as per package instructions.
  2. Mix all seasoning ingredients in a small bowl and set aside.
  3. Heat oil in a wok or skillet over high heat, add garlic and stir-fry until fragrant.
  4. Add chicken and shrimp, stir until they change color, then add rice noodles and Chinese broccoli.
  5. Stir everything together, add the seasonings, and continue stirring until well mixed.
  6. Push noodles to one side, add beaten eggs, and cook until set, then mix into the noodles.
  7. Serve immediately with cut Thai chilies.
