Ingredients

The main ingredients

  • 14–16 ounces protein (crispy tofu, chicken, or shrimp)
  • 1 pound fresh flat wide rice noodles
  • 5 oz Chinese broccoli (or bok choy)
  • 2 eggs whisked
  • 2 tablespoons peanut or coconut oil
  • 1 tablespoon garlic (about 4 cloves)
  • lime wedges optional for serving

Stir fry sauce

  • tablespoons soy sauce
  • 2 tablespoons oyster sauce (or vegan oyster sauce)
  • 2 tablespoons sweet dark soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon white pepper
  • 1 tablespoon sugar (or coconut sugar)

Instructions

  1. Cook the protein and set it aside.
  2. Prep the noodles by cutting them into smaller pieces or microwaving if hardened.
  3. Prep the Chinese broccoli by cutting the stems and leaving the leafy parts long.
  4. Make the stir-fry sauce by mixing all sauce ingredients in a small bowl.
  5. Heat a wok or skillet, add oil, and cook garlic until brown.
  6. Add the whisked eggs and scramble lightly.
  7. Add the rice noodles and let them cook without stirring for 2 minutes.
  8. Add the Chinese broccoli stems and stir for 2 minutes.
  9. Add the crispy tofu and leafy parts of the Chinese broccoli, stir gently, and cook for 2 more minutes.
  10. Pour in the stir-fry sauce, mix gently, and cook for 1 more minute before serving.
