Ingredients

The ribs

  • 2 lbs bone-in short ribs
  • 1 tsp chipotle powder
  • 2 tsp sea salt
  • 1 tsp pepper

The sauce

  • 1 medium pear, peeled, cored, and cut into chunks
  • ¼ cup coconut aminos
  • 4 cloves garlic, peeled
  • 1 shallot peeled and cut into chunks
  • 1 tbsp fresh ginger, peeled and cut into chunks
  • 1 tsp fish sauce
  • 2 tsp coconut vinegar
  • ¾ cup chicken broth

Optional topping

  • ¼ cup mayo
  • 1 tbsp hot sauce
  • 2 green onions chopped

Instructions

  1. Season the ribs with salt, pepper, and chipotle powder.
  2. Place the ribs in the Instant Pot.
  3. Blend all sauce ingredients until smooth.
  4. Pour the sauce over the ribs and mix to coat.
  5. Secure the lid and cook on high pressure for 45 minutes.
  6. Let the pressure release naturally for 20 minutes, then manually release any remaining pressure.
  7. Serve with optional toppings.
