Instant Pot Short Ribs with Gravy

Instructions
- 1. Whisk together the soy sauce, water, brown sugar, sesame oil, salt, garlic powder, ginger, and black pepper to make the marinade.
- 2. Place the ribs in a shallow dish and pour the marinade over them. Allow to marinate at room temperature for an hour or refrigerate overnight.
- 3. Set the Instant Pot to HIGH sauté and add the butter. Once melted, add the onion and cook for 6 minutes, stirring occasionally.
- 4. Add the beef ribs to the pot along with any remaining marinade, then lock the lid and set to cook on HIGH pressure for 45 minutes.
- 5. After cooking, allow the pressure to release naturally, then carefully remove the ribs and trivet from the pot.
- 6. In a small bowl, whisk together the cornstarch and 2 tablespoons of water, then add to the pot and bring to a boil until the sauce thickens.
