Ingredients

The meat

  • 4.5 pounds beef short ribs

The seasoning

  • 1 tablespoon Magic Mushroom Powder or Diamond Crystal kosher salt

The cooking fat

  • 1 tablespoon extra virgin olive oil or cooking fat of choice

The aromatics

  • 2 large shallots, thinly sliced (about 1 cup)
  • 6 cloves garlic, peeled and smashed

The sauce

  • 1 cup marinara sauce

The garnish

  • ¼ cup minced Italian parsley (optional)

Instructions

  1. Pat the beef short ribs dry and toss them with Magic Mushroom Powder in a bowl.
  2. Turn on the Sauté function on the Instant Pot and heat the cooking fat.
  3. Add the sliced shallots and cook until softened, then add the smashed garlic and cook until fragrant.
  4. Add the seasoned beef short ribs and pour in the marinara sauce, stirring to combine.
  5. Cancel the Sauté function, lock the lid, and cook for 45 minutes under high pressure.
  6. Allow the pressure to release naturally or manually release after 15 minutes if you're impatient.
  7. Check the tenderness of the ribs; if needed, cook for an additional 5 minutes under high pressure.
  8. Adjust seasoning if necessary and serve topped with minced Italian parsley if desired.
