Instructions
- Heat the oil in a large deep skillet.
- Dredge the chicken thighs in seasoned flour and sear in the skillet for 3-4 minutes on each side.
- Remove the chicken and set aside.
- Add the peppers, onion, celery, and garlic to the skillet and sauté for 1 minute.
- Mix flour into the oil to create a roux, cooking for 12-15 minutes until medium brown.
- Slowly add chicken broth to the roux, mixing well.
- Stir in crushed tomatoes, Creole seasoning, and Worcestershire sauce.
- Return the chicken to the skillet and simmer for 1 hour.
- Remove the chicken, cool, and shred the meat.
- Add sausage, okra, and parsley to the gumbo and simmer for 20-30 minutes.
- Return the shredded chicken to the pot and heat through for 5 minutes.
- Serve the gumbo over rice, garnished with green onions and file powder.
