  • 1 pound cajun sausage
  • 1 pound skinless chicken thighs
  • ½ cup vegetable oil
  • ¾ cup all-purpose flour
  • 1 medium onion
  • 1 medium bell pepper
  • 3 stalks celery
  • 2 tablespoons Italian parsley
  • 2 cups okra
  • 1 quart chicken stock
  • 3 cloves garlic
  • 1 tablespoon Worcestershire sauce
  • 14 ounces crushed tomatoes
  • 1 tablespoon Creole seasoning
  • 1 teaspoon hot sauce

For serving

  • 2 cups hot cooked rice
  • 1 pinch chopped green onions
  • to taste file powder

Instructions

  1. Heat the oil in a large deep skillet.
  2. Dredge the chicken thighs in seasoned flour and sear in the skillet for 3-4 minutes on each side.
  3. Remove the chicken and set aside.
  4. Add the peppers, onion, celery, and garlic to the skillet and sauté for 1 minute.
  5. Mix flour into the oil to create a roux, cooking for 12-15 minutes until medium brown.
  6. Slowly add chicken broth to the roux, mixing well.
  7. Stir in crushed tomatoes, Creole seasoning, and Worcestershire sauce.
  8. Return the chicken to the skillet and simmer for 1 hour.
  9. Remove the chicken, cool, and shred the meat.
  10. Add sausage, okra, and parsley to the gumbo and simmer for 20-30 minutes.
  11. Return the shredded chicken to the pot and heat through for 5 minutes.
  12. Serve the gumbo over rice, garnished with green onions and file powder.
