Ingredients

The base

  • 3 tablespoons vegetable oil
  • cup all-purpose flour
  • 2 red bell peppers chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 1 tablespoon hot sauce (optional)
  • to taste coarse salt and ground pepper

The proteins and vegetables

  • 1 10 ounce package frozen sliced okra
  • 8 ounces smoked pre-cooked sausage (such as andouille or kielbasa), cut into ½ inch thick slices
  • 4 cups shredded chicken
  • ½ pound large shrimp

Instructions

  1. Heat the oil in a large Dutch oven or heavy-bottomed pot over medium heat.
  2. Add flour and whisk constantly until it turns pale golden, about 5 to 7 minutes.
  3. Stir in the bell peppers, onion, garlic, and oregano; season with salt and pepper.
  4. Cook the vegetables until they start to soften, about 5 to 7 minutes.
  5. Add the chicken broth, tomato paste, and hot sauce if using.
  6. Stir in the okra, chicken, and sausage. Bring to a boil, then reduce heat to medium.
  7. Add the shrimp and cook for 2 to 3 minutes until they are pink and cooked through.
  8. Season with salt and pepper to taste and serve.
