Instructions
- Heat the oil in a large Dutch oven or heavy-bottomed pot over medium heat.
- Add flour and whisk constantly until it turns pale golden, about 5 to 7 minutes.
- Stir in the bell peppers, onion, garlic, and oregano; season with salt and pepper.
- Cook the vegetables until they start to soften, about 5 to 7 minutes.
- Add the chicken broth, tomato paste, and hot sauce if using.
- Stir in the okra, chicken, and sausage. Bring to a boil, then reduce heat to medium.
- Add the shrimp and cook for 2 to 3 minutes until they are pink and cooked through.
- Season with salt and pepper to taste and serve.
