Ingredients

The Caprese Bites

  • 20–24 pieces cherry or grape tomatoes
  • 4 ounces mozzarella, shredded or cut into small squares
  • ½ cup fresh basil leaves, torn
  • 2 tablespoons butter, melted
  • 1 tablespoon dried oregano
  • optional marinara sauce, for dipping

The Pizza Dough

  • cup warm water
  • ½ packet yeast (1.5 tsp. or 1/8th oz.)
  • cups all-purpose flour
  • 1 teaspoon Italian seasonings or dried oregano
  • 1 teaspoon sea salt
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F and grease a pie plate.
  2. If using canned pizza dough, cut it into 24 equal squares; if using homemade, break off walnut-sized pieces and stretch each into a circle.
  3. Slice each tomato in half and sandwich a piece of cheese and a basil leaf between the halves.
  4. Wrap the dough around the tomato sandwich to form a ball, pinching the ends together.
  5. Place each ball seam-side down in the greased pie pan and brush with melted butter, sprinkling oregano on top.
  6. Bake for about 20 minutes until golden and serve immediately.
  7. To make the pizza dough, mix warm water and yeast, then add flour, salt, and seasonings, mixing until soft and elastic.
  8. Let the dough rise for one hour before using.
