Ingredients

The toppings

  • 12 ounces grape tomatoes, halved
  • 3 cloves garlic, sliced
  • 1 ½ tablespoons avocado oil, divided
  • ½ teaspoon crushed red pepper
  • 4 ounces fresh mozzarella cheese
  • 2 teaspoons balsamic glaze
  • ¼ cup fresh basil, sliced thin

The crust

  • 1 pound pizza dough (gluten-free if desired)

Instructions

  1. Preheat the oven to 420°F and prepare a pizza pan with parchment paper.
  2. Toss grape tomatoes and garlic with 1 tablespoon of avocado oil and spread on a baking sheet. Bake for 30 minutes until the tomatoes start to wilt.
  3. Roll out the pizza dough on a lightly floured surface, then transfer it to the prepared pizza pan. Crimp the edges and prick the center with a fork. Bake for 6 minutes.
  4. Remove the dough from the oven, brush with the remaining avocado oil, and top with the roasted tomatoes and mozzarella cheese. Sprinkle with crushed red pepper.
  5. Return to the oven and bake for 16 minutes until the cheese is melted and the crust is golden brown.
  6. Drizzle with balsamic glaze and garnish with fresh basil before serving.
