Caprese Bread

Ingredients

The bread

  • 1 loaf rustic bread (focaccia, pane rustico, pugliese)

The toppings

  • 3 tablespoons olive oil
  • 1 clove garlic (cut in half)
  • 10 ounces fresh mozzarella (thinly sliced)
  • 4-6 pieces ripe tomatoes (sliced)
  • cup basil leaves (thinly sliced)
  • 3 tablespoons balsamic glaze
  • to taste coarse salt
  • to taste pepper

Instructions

  1. Preheat the broiler.
  2. Split the loaf of bread lengthwise.
  3. Brush each half of the bread with olive oil.
  4. Rub the cut side of the garlic all over each half of the bread.
  5. Cover the surface of each half of the bread with mozzarella.
  6. Place the bread on a sheet pan and broil for 4-5 minutes until the cheese is melted, watching carefully to prevent burning.
  7. Remove from the oven and place sliced tomatoes on top of the mozzarella.
  8. Sprinkle basil, salt, and pepper on top of the tomatoes.
  9. Drizzle balsamic glaze over the top and serve immediately.
