Caprese Bread

rustic bread (focaccia, pane rustico, pugliese)
The toppings

olive oil

garlic (cut in half)

fresh mozzarella (thinly sliced)

ripe tomatoes (sliced)

basil leaves (thinly sliced)

balsamic glaze

Instructions
- Preheat the broiler.
- Split the loaf of bread lengthwise.
- Brush each half of the bread with olive oil.
- Rub the cut side of the garlic all over each half of the bread.
- Cover the surface of each half of the bread with mozzarella.
- Place the bread on a sheet pan and broil for 4-5 minutes until the cheese is melted, watching carefully to prevent burning.
- Remove from the oven and place sliced tomatoes on top of the mozzarella.
- Sprinkle basil, salt, and pepper on top of the tomatoes.
- Drizzle balsamic glaze over the top and serve immediately.
