Caprese Sandwich

Ingredients

The sandwich

  • 2 pieces ciabatta rolls
  • 8 oz fresh mozzarella
  • 2 large tomatoes
  • 1 cup baby spinach
  • 12 leaves basil

The seasoning and dressing

  • 1 tablespoon Italian parsley, finely chopped
  • ¼ teaspoon black pepper
  • ½ teaspoon table salt
  • 1 tablespoon balsamic vinegar or balsamic glaze
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Rinse the tomatoes and basil leaves, then pat dry the basil leaves.
  2. Slice the mozzarella and tomatoes into ½ inch thick slices.
  3. Sprinkle salt and black pepper over the tomato and mozzarella slices.
  4. Slice the ciabatta rolls in half.
  5. Heat a frying pan over medium heat, coat with olive oil, and toast the ciabatta bread face down for 2-3 minutes.
  6. Remove the bread from the pan and place on a plate.
  7. Add a layer of baby spinach to the bottom part of the roll, then drizzle balsamic vinegar and olive oil over the spinach.
  8. Add a layer of seasoned mozzarella cheese over the spinach.
  9. Add a layer of sliced tomatoes on top of the mozzarella, sprinkle with chopped parsley, and drizzle more olive oil and balsamic vinegar if desired.
  10. Place basil leaves on top of the tomatoes, then add the top of the bun.
