Ingredients

  • 1 oz fresh Mozzarella cheese
  • 2 slices red, ripe tomato
  • to taste salt
  • to taste black pepper
  • 2 slices bread
  • 1 teaspoon balsamic glaze
  • 2-4 leaves fresh basil

Instructions

  1. Preheat the oven to broil and adjust the rack to the top position.
  2. Sprinkle salt and pepper on the Mozzarella and tomato slices.
  3. Place the bread slices on a baking sheet and lightly mist with cooking spray.
  4. Broil the bread for about 2 minutes until golden, watching closely to prevent burning.
  5. Flip the bread over and place the Mozzarella on one slice.
  6. Broil again for 1-2 minutes until the cheese is warm and softened.
  7. Assemble the sandwich by placing tomatoes on the cheese, drizzling with balsamic glaze, and adding basil leaves before topping with the second slice of bread.
