Ingredients

  • 2 slices sourdough or other sturdy bread
  • 2 teaspoons fruity olive oil
  • ½ cup arugula leaves
  • 2-3 thick slices tomato
  • 2 thick slices fresh mozzarella
  • 5-10 leaves fresh basil
  • 1 teaspoon balsamic vinegar
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Drizzle olive oil on the slices of bread.
  2. Layer arugula on the bottom slice.
  3. Add tomato slices on top of the arugula.
  4. Place mozzarella slices on top of the tomatoes.
  5. Top with torn basil leaves and season with salt and pepper.
  6. Drizzle with balsamic glaze and more olive oil if desired.
  7. Enjoy your sandwich.
