Ingredients

  • 4 squares Focaccia
  • 1 handful arugula
  • 1 8-ounce ball fresh mozzarella cheese
  • 2 large tomatoes
  • cup Roasted Cherry Tomatoes
  • to taste Pickled Red Onions
  • to taste fresh basil leaves
  • to drizzle tablespoons Extra-virgin olive oil
  • to taste Flaky sea salt
  • to taste freshly ground black pepper

Instructions

  1. Slice the focaccia bread in half.
  2. Layer arugula, mozzarella, and tomato slices on the bottom half of the bread.
  3. If using, add roasted cherry tomatoes and pickled onions.
  4. Top with fresh basil leaves.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Place the top half of the bread on the sandwich and serve.
